Just kidding
I mentioned my garden this morning. One of my fall vegetables coming along quite nicely is acorn squash. Maybe you have them in your garden also. Here’s a great recipe.
Roasted Corn Pudding in Acorn Squash
1 small acorn squash (2lb.) cut in half lengthwise and seeded
1 TBS clarified butter or olive oil
1 cup milk (you can substitute coconut milk if you want)
1 egg plus 2 egg whites
1/2 cup fresh corn kernels
1/4 tsp anise seed, chopped (or curry paste if using coconut milk)
1/2 cup chopped scallions
1 pinch of freshly grated nutmeg
1/4 tsp of fine grain sea salt
1/2 cup grated white cheddar cheese
Preheat oven to 375
Rub orange flesh of each half squash with butter/oil. Place cut side up on a baking sheet. You may have to trim the bottom (green side) a little to get the squash to sit flat. Cover with foil and bake for about 40 minutes.
Combine the milk, eggs, corn, anise (or curry paste), 1/2 of the scallions, nutmeg and salt. Fill each squash with filling. There may be some left over so pour into ramekin and bake with squash. Continue baking squash, uncovered, for another 30 to 50 minutes or until tender. Remove from oven and set oven to broil. Sprinkle cheddar cheese on top of squash and broil until cheese is brown and bubbly. Add remaining scallions and serve.
Be creative and mix up the spices, parsley and cilantro both go well with the corn instead of the anise or curry. (lmsinca)

BTW, just for the record, I'm not trying to be a posting hog, but if no one else is going to put something up I will. I'd much prefer others take ownership of this place and thanks to those of you who are. I'm much more comfortable just being a cog in the wheel. I just don't want to leave a lot of blank spaces around every day until we really get cookin' (see how I tied that in with our theme of the day).

That sounds yummy, lms! I'm giving it a shot tomorrow for dinner.I'll be more prolific next week, I've just been slammed with the moving and ancillary activities. The second IKEA piece went together better, but I've still got to take that damned dresser apart and start over. On the plus side, I'm now the proud owner of the world's cutest little cordless drill. I told the guy at Home Depot that I lost my DeWalt in a divorce and I ended up with three associates helping me decide which one to buy! Single women evidently bring them flocking from other aisles. :-)Now to go put my new shoe cabinet together. Depending on how that goes I may surface again later.Football update: UMich demolished Minnesota 58-0, MSU beat OSU 10-7 (sorry, qb!), Mark's Longhorns and okie's Sooners are handling their opponents handily so far in both games, and Utah is losing to UWash 10-7 at the half.

Hi michi, I know how busy you've been. I actually used to enjoy getting a little attention at the hardware store myself. But yeah, play with the spices, I mix it up all the time. You could also use a Mozzarella or grated Parmesan cheese on top.Good luck re-doing the dresser.I've decided to just keep plugging away and following qb's advice, "if we build it they will come" (fingers crossed).

I finally got the guys in bed and am settling down to watching Nebraska's first Big Whatever game. I grew up in Hastings, Nebraska (where Tom Osborne coached before joining Bob Devaney's staff) and spent a year in Madison. I used to walk by Camp Randall when I was there.Score update. 14 – 14.The dish sounds great by the way. I grew up with acorn squash being done one way. Split and fill the cavity with butter and brown sugar. I like the savory twist.BB

Those folks in Texas think that they know the game, but the Big Ten is the cradle of collegiate football. Spoken like somebody who would put brown sugar in acorn squash. . .:-) Good to see you, Fairlington. I liked your Fish Carpaccio recipe, also. I'm going to have to start experimenting with ATiM recipes I can see. Maybe we can put a cookbook out in a year or so!

I cut my teeth watching USC play, we even went to a couple of games while OJ was playing. My dad graduated from SC but I had an aunt from OK and I remember one year she came out for a game at the Coliseum, a lot of fun in that parking lot.And, I grew up eating "boiled" vegetables, yuck.

Yes, overly boiled veggies. I'm glad (?) to know that it wasn't just Midwestern Moms that cooked like that!Shoe cabinet came out fine, except that IKEA put the holes on the wrong side of one of the boards so now I need to get some drill bits in order to drill some pilot holes. Home Depot run in the morning!Utah lost 31-14. Not looking good for our inaugural Pac12 season.

Sorry about Utah, I've had a busy day sitting at my desk doing paperwork for taxes. We filed an extension this year and I have an appointment Friday with our tax guy. I'd rather have a mammogram, lol. Anyway, I missed most of the games today.I'd much prefer watching college ball to pro, although by the end of the season I admit to getting a little excited. I also missed all the baseball games today.

Re bannedagain, I forget who has his email. It wasn't me but I know someone talked to him. Maybe he or she could try again? He's one of the people I like to go to the Plumline to read.I'm going to work on a post that would be right up his alley and I'm sure both he and scott would shoot me down, lol.
